When preparing a festive dinner, you can stuff the bird with apples and buckwheat: the first ingredient will give the meat a delicate, pleasant aroma and juiciness, and the second will help make the dish much more satisfying.

Duck with buckwheat and apples: a recipe

Selection and preparation of ingredients for stuffed duck

The list of products that you will need to prepare stuffed poultry for the festive table is small: – medium-sized duck; – 250 g of buckwheat; – 10 small green apples; – 1 tbsp. butter; – pepper, salt and seasonings to taste.

First you need to prepare all the ingredients. Wash the apples and cut into small wedges. Then slightly heat the oil, add a pinch of salt, a little pepper and other seasonings to your taste, mix. It is recommended to take peas and grind them to make them more aromatic. If you don’t know which seasoning to choose, feel free to add sage. Lubricate the duck with the resulting mixture and put the bird in the refrigerator for several hours. Then rinse the buckwheat, put it in a saucepan, fill it with boiling water and wrap it up with a towel. There is an easier option: you can use a thermos.

Duck with apples and buckwheat

When all the ingredients are ready, you need to move on to the most difficult task – stuffing. Mix apples and buckwheat and then fill the duck with them. While you are doing this difficult task, preheat the oven to 180 ° C. When you have finished preparing the duck with buckwheat and apples for baking, sew up the bird with special culinary thread and put it in the oven on the wire rack.

Place an ovenproof dish on the bottom to drip fat into. If you water a duck stuffed with apples and buckwheat with this fat from time to time, the crust will turn out to be rosy and crispy.

The duck will cook for about an hour and a half. When it’s baked, open the oven and let the bird cool slightly. Then place the carcass on a pretty platter, remove the culinary thread, and cut the carcass in half to make it easier to pick up the filling. The brown-crust stuffed duck looks delicious, but you can additionally garnish it with lettuce and herbs.

For a more complex recipe, make the honey duck. Take 60 g of fresh honey, add a pinch of salt, pepper and ground coriander to it and coat the bird with the resulting mixture, and then leave it in the refrigerator for 10-12 hours, wrapping it with cling film. Prepare 350 g of buckwheat in the same way as indicated in the previous recipe. Chop one onion finely, fry and add to the buckwheat. Then cut 2 small apples into cubes and mix with cereals too. Stuff the duck with the resulting mass and bake it in the oven for 1,5-2 hours at a temperature of 180 ° C.
