Cheese is a white soft pickled cheese with a characteristic fresh smell and salty taste, which is usually made from sheep’s milk. There is a number of national dishes – Slovak, our country, Romanian, Moldovan, in which feta cheese is an integral component. This cheese is especially good in some salads.

Cheese and vegetable salads

Cheese and watermelon pulp salad

The spicy salty taste of feta cheese is ideally combined with the sweetish pulp of watermelon, giving this refreshing dish additional spicy notes. You will need: – 300 g of watermelon pulp; – 100 g of feta cheese; – 2 sprigs of mint; – freshly ground black pepper; – olive oil.

Cut the flesh of the watermelon from the peel, free it from the grains and cut into cubes, put in a salad bowl. Chop the cheese directly into the bowl of watermelon. Pour in some olive oil and season the salad with pepper. Free the mint leaves from the twigs, add to the salad, mix. Serve the salad immediately before the watermelon has run out of juice.

Spinach, feta cheese and strawberry salad

Cheese goes well not only with vegetables or fruits, but also with fresh berries. A striking example of this is a salad of feta cheese, spinach and strawberries. To prepare two servings of salad, you will need: – 100 g fresh young spinach leaves; – 200 g feta cheese; – 12 large strawberries; – olive oil; – strawberry vinegar.

You can substitute raspberries, pitted cherries, or apricot pieces for strawberries.

Rinse the spinach leaves under running water and pat dry with a paper towel. Remove the stalks from the strawberries and cut them into quarters, cut the cheese into cubes. Combine all the ingredients in a salad bowl, season with olive oil and a teaspoon of strawberry vinegar. Cheese dishes are usually not salted, since the cheese itself gives them the necessary saltiness.

You can make your own strawberry vinegar by placing about 250 g of peeled and chopped strawberries in a 150 ml jar of apple cider vinegar. Infuse the vinegar for 3 weeks at room temperature, stirring occasionally. Strain and store in an airtight, non-reagent container. You can make raspberry vinegar the same way.

Tomato salad with feta cheese and pickles

To balance the saltiness of feta cheese and cucumbers, juicy fleshy tomatoes, apples and a sweetish spicy dressing are ideal. Take: – 500 g of large fleshy tomatoes; – 200 g feta cheese; – 3 medium granny smith apples; – 4 medium pickled cucumbers; – 1 head of red sweet salad onions; – a handful of fresh mint leaves; – 8 tablespoons of olive oil; – 1 lemon; – 1 teaspoon of liquid light honey; – 1 teaspoon of Dijon mustard.

Peel the apples, cut in half, remove the core and cut into thin slices, put in a salad bowl and sprinkle with juice squeezed from half a lemon. Peel the onion, rinse, dry and cut into thin half rings, add to the salad bowl. Cut the tomatoes into large cubes and add to the salad along with the thinly sliced ​​cucumbers. Chop the feta cheese. Prepare the dressing by mixing the juice squeezed out of the remaining lemon half, olive oil, mustard, and honey. Season the salad, sprinkle with mint leaves, stir and refrigerate for 20-30 minutes. Serve chilled.

Warm potato salad with feta cheese dressing

You can add feta cheese to a salad not only by crumbling cheese or cutting it into cubes. Try making a thick cheese-based dressing that’s perfect with hearty, warm snacks. You will need: – 1/2 cup soft cheese; – 1 lemon; 1/4 cup apple cider vinegar – 2 tablespoons of olive oil; – 2 tablespoons of thick sour cream; – 1 teaspoon of sugar; – 2 large cloves of garlic; – a pinch of freshly ground pepper; – 1 kilogram of small young starchy potatoes; – 100 g of spicy dill and parsley; – salt.

Dissolve 1 teaspoon of salt in a deep saucepan. Rinse the potatoes well, carefully removing the dirt. You can boil the young salad potatoes in their skins, or you can peel them by lightly scraping the surface of the potatoes with a sharp vegetable knife. Boil potatoes in salted water. While the potatoes are cooking, season them. Place sour cream, feta cheese and peeled minced garlic in a blender bowl. Remove the zest from the lemon and squeeze the juice, add them to the rest of the ingredients, pour in the olive oil, season with pepper. In the bowl of a food processor, pulse all the ingredients into a homogeneous mass with a little bit of feta cheese. If you like smooth sauces, mix longer on medium speed. Drain the water from the finished potatoes and put the potatoes, covering the pot with a lid, back on the fire for 2-3 minutes to evaporate the remaining liquid and dry the tubers a little. Put the hot potatoes in a salad bowl, pour in the dressing and sprinkle with chopped herbs. Stir and serve warm.

Often, various versions of Greek salad are prepared with feta cheese, as this cheese is in many ways similar to the famous feta. Take: – 3 large fleshy tomatoes; – 1/2 small red onion; – 50 g of capers; – 90 g large pitted olives; – 1 tablespoon dried oregano; – 2-3 tablespoons of olive oil; – 180 g feta cheese: – freshly ground black pepper.

Cut the tomatoes and feta cheese into small cubes, the onion into thin half rings. Place in a bowl and add capers and olives, season with pepper and oregano. Stir and set aside for 15–20 minutes for the juice to come out. Season with olive oil, stir and serve.
