Cheesecakes are small cakes made from curd mass, which are cooked in a pan or in the oven. This dessert goes well with honey, condensed milk, jam or sour cream, has a delicate taste and beautiful appearance.

To make the cheese pancakes tender and juicy, use only fresh cottage cheese. It should also be not too greasy and moderately dense. If you rub it through a sieve before cooking, the dessert will be even more fluffy and you won’t need baking soda.

Vanilla will help to add aroma to cheesecakes. For 500 g of cottage cheese, ½ teaspoon of this spice will be enough. Well, if you don’t like the smell of vanilla, you can add a small amount of chopped currant or mint leaves, put in a little nutmeg or, for example, cardamom.

Ruddy and moderately baked cheesecakes will turn out if you do not spare oil for frying. They should also be cooked over low heat, but the pan should be hot.

The classic recipe for making cheese cakes

Ingredients: – 400 g of cottage cheese; – 2 tbsp. tablespoons of raisins; – 2 eggs; – ½ cup flour; – ½ teaspoon of soda, slaked with vinegar; – salt on the tip of a knife; – ½ teaspoon of vanilla; – vegetable oil for frying; – 3 tbsp. tablespoons of sugar.

Beat eggs in a separate cup. Pour raisins with boiling water, cover with a saucer and leave for 15 minutes to soften. Add beaten eggs, sugar, salt and flour to the curd in turn. Mix everything thoroughly. Add vanilla and steamed raisins, stir again. Form round cakes 1 cm thick from the curd mass. Heat the vegetable oil in a pan, reduce the heat and fry the curd cakes until golden brown, having previously rolled them in flour. Serve with sour cream or condensed milk.

To make the dish not so greasy, put the prepared cheesecakes on a plate covered with a paper napkin.

If you are limiting your consumption of fried foods, bake the pancakes in the oven. To do this, do not roll them in flour, but simply put them on a baking sheet covered with foil and bake for 30 minutes at 180 ° C. Or use silicone molds.

Salted cheesecakes with herbs

Ingredients: – 350 g of cottage cheese; – 1 egg; – 4 tbsp. tablespoons of flour; – salt to taste; – ½ teaspoon of soda, slaked with vinegar; – 1/3 bunch of green onions; – ½ bunch of dill; – salt to taste; – vegetable oil for frying.

If the cottage cheese is very fat, you can add a couple more tablespoons of flour to the curd mass. And if it’s too dry – 1 tbsp. a spoonful of sour cream

In a deep bowl, combine the grated cottage cheese, beaten egg and flour. Salt to taste, add baking soda and mix everything thoroughly. Place chopped dill and green onions in the curd mixture. Form the curd cakes, roll them in flour and fry in a pan until golden brown.
