Seafood brings a sophisticated touch to the everyday family menu. In addition to the already familiar shrimps, squid and mussels, scallops are increasingly appearing on our tables. Where do they get this delicacy? Why is it so valued? And what dishes are prepared from it? We are expanding our culinary horizons together with the Maguro brand.

Even those who have never tasted scallops know exactly what they look like. Decorative ribbed shells are the most popular souvenir in the world, brought from a vacation by the sea. Bivalve shells with characteristic “ears” on the sides and a wavy pattern that runs in grooves from the base, and there are scallops.

Inside the flaps hides a delicate pulp — a real delicacy with a pleasant refined taste. The nutritional value of scallops is impressive. In terms of protein reserves, they are in no way inferior to pork or beef. At the same time, this is an absolutely dietary product, 100 g of which contains no more than 95 kcal. In addition, they are rich in rare and important micro – and macro-elements for the body.

Scallops have chosen almost all the seas on the planet. In total, there are about 20 thousand species in the world. All of them live peacefully on the sea floor, burying themselves in layers of silt, away from the eyes of predators. Sometimes they populate underwater surfaces. In this regard, they are extracted by divers, each of whom is able to collect up to 500 kg of shellfish per shift. However, in the most prolific regions, mining is still carried out by the trawl method.

The leaders in scallop production are the United States, Canada, France and Japan. Active shellfish fishing is also carried out in Russia. It is mainly concentrated in the Far Eastern seas, where the coastal scallop lives. In the Bering, Okhotsk and Chukchi Seas, Bering Sea scallop is extracted. The waters of the White and Barents Seas are famous for the Icelandic scallop. In cooking, scallops are used quite widely. They are boiled, fried, stewed, baked and marinated in the Asian manner. Salads with scallop have earned a special love of gourmets.

Chop 3 cloves of garlic and 0.5 pods of chili pepper, fry in a pan with olive oil and immediately remove. We put here 8-10 scallops and large peeled shrimps “Maguro”. Stirring continuously, fry them on all sides for 2-3 minutes, then place them on a paper towel. Cut 5-6 cherry tomatoes, 1 cucumber. Mix the dressing with 1 tbsp fish sauce, 2 tbsp olive oil, 1 tsp lemon juice, a pinch of pepper and salt.

We tear a bunch of arugula and iceberg lettuce with our hands, make them a pillow on a platter. Beautifully spread on top of fried seafood, slices of tomatoes and cucumber, pour the dressing. Sprinkle the salad with sesame seeds and garnish with lemon slices.

Golden scallop for a snack

When baked in the oven, scallops perfectly reveal the finest taste facets. In addition, they are perfectly combined with different products and sauces. That is why hot snacks with them are so delicious.

Melt 2 tablespoons of butter in a frying pan and pour in another 2 tablespoons of olive oil. Fry until transparent 2 white onions, cut into half rings. Pour out 200 g of mushrooms to them in thin plates, lightly browned. Next, add 100 ml of dry white wine and evaporate by half.

Now we put two dozen Maguro scallops in the pan and pour 200 ml of warm fat cream. Simmer the mixture for just a couple of minutes, salt and pepper to taste, then remove from the heat and spread out on ceramic molds. Sprinkle with grated cheese and place in a preheated 220 °C oven for 5 minutes. This snack will transform the menu of the most ordinary family dinner.

Soup filled with tenderness

Scallop soup will be another gift for home gourmets. Heat 3 tablespoons of olive oil in a frying pan and fry 12-14 Maguro scallops. We will also need 300 g of Maguro cod fillet» and 200 g of shrimp. We cut the fish into slices and brown it in the same oil where the scallops were fried.

Finely chop 2 cloves of garlic and 5-6 heads of shallots, grate 3 cm of ginger root on a fine grater. Heat 2 tablespoons of sesame oil in a saucepan with a thick bottom and pass the spicy mixture in it. Then add 400 g of corn kernels and 1 liter of fish broth, bring to a boil, stand on medium heat for a couple of minutes.

Pour in 200 ml of warmed coconut milk. Cut off the stems from a small bunch of coriander, chop them and send them to the pan along with a pinch of salt and pepper. Cook the soup for 5 minutes, cool, beat with a blender and pass through a sieve. Again, bring it to a boil and simmer for just a minute. We boil the shrimps according to the instructions. Pour the soup on plates, spread the pieces of cod with scallops, shrimp. This dish will conquer from the first spoonful, even those who are indifferent to soups.

Pasta with a subtle twist

Linguini with scallops is a perfect combination that will be appreciated not only by pasta lovers. First of all, we put 300 g of linguine to cook until al dente. Sprinkle with salt and pepper 8-10 scallops “Maguro”, quickly fry in olive oil until golden brown. We spread them on a plate with a paper towel.

Now let’s do the sauce. We cut 2 cloves of garlic into plates, and a large fleshy tomato into cubes. As small as possible, chop a bunch of basil. In a frying pan with hot olive oil, brown the garlic until golden brown. Lay the chopped tomato and passeruem for another 3 minutes. Next, pour in 130 ml of dry white wine, completely evaporate it and pour out the greens. Add salt and spices to the sauce to taste, let it soak up the flavors under the lid.

Spread the finished linguini on plates, pour the tomato sauce, and sit on top of the fried scallops. Sprinkle them with grated parmesan and serve quickly. Pasta in this version will certainly fall in love with your loved ones.
